I have removed the old hot water tank to under the rear bed. The space under the vanity is now a large storage unit.
I enhanced this space by rerouting the plumbing traps, water lines, and shut off valves to run parallel to outside wall. They take up about 3". If you look hard enough you can find a wash basin waste that does not drop down any more that a couple of inches and can then go straight back to connect to the trap and waste that run parallel to the outside wall. This leaves a large cavernous space for storage.
I fashioned a 4 sided box out of white 1/4" plastic sheet (no top or front). Fitted it in with glue and screws, replaced the aluminum sliding track and doors and now I have a great water proof cupboard.
A lot of fiddle but well worth the trouble.
