My tranny temp sensor is in the pan, which is probably the most accurate, most meaningful, and least subject to "spikes". What I've seen over the past year (at highway speed):

As you pointed out, sometimes one can just be a little but too anal. :) :) The thing is to have just the few gauges you really need BUT know how to interpret what they are telling you.
