Gary,
For all the cars I've restored, and the two motorhomes I've had
upholstery work done on, I go where the upholstery folks go. Look for
a fabric outlet store near you. Remember, if it is for seating, the
fabric is almost the density of burlap. Very durable and usually
applied over a dacron backing.

I need to replace mine too, but I'll plan to have the windows out. I thin plastic of some sort covered in foam and fabric or vinyl is what I imagine.

No need to take the windows out. I re-did mine behind the couch and hte windows are not in the way.
I covered it with Microfoil and some aluminum tape. Over that I mounted carpet that Laurie bought at Menards by the yard.
Someday I intend to do the dinette side using that same carpet. If you like the carpet idea, you can mount the carpet using sheet metal screws. The screw heads will hide recessed in the carpet and you will never see them. If you ever want to get back there again simply remove the screws.
