I took the Palm Beach out today for a quick spin, and when I topped off the fuel tank, I saw antifreeze coming out from somewhere. I crawled under the right side and it was coming out of the recovery bottle hose. The coach was not overheating at all, in fact, running cool as it was a nice day, and running like a top.
Could I simply have overfilled the bottle? Would that cause it?

Take the recovery tank and check it for a crack on the seam line or the
bottom. Common, problem for a 40+ year old item. Jim K does have a
replacement in the catalog/ Tough to find locally. I have repaired mine
with silly cone and gorilla tap. silicone first then tape over that,
doesn't require much silicone. you could possibly find something similar
at the big box store or the men's mall.

Check your radiator cap. Sounds like it's your source of the problem if the leak is indeed out of the overflow hose. Could be as simple as not having the cap on correctly. Some shops may still have the means to check the cap for you, you might try that also.
And yes, overfilling can also cause the leak.

What Hal says. Caps only last a couple of years, make sure that you have
the correct 9 pound for your radiator, and that it was screwed down all the
way. I made that mistake before, as well. Lots of others have also.
