I heard that a few missed the handout for the Bolts and Gaskets presentation.

Great presentation. Explains some of the things I "knew". Dismisses some of the things I thought I "knew".
Now what I would like to find out is: What grade of fastener to use for what application. I believe (but can't measure so it is an opinion) that, as stated, fastener grades are not interchangeable. Why?
Is there a website that can explain that in a way normal mortals can understand?

You asked two separate questions, so I will try to use the extremes of the first to make the issue clear.
If you use a Gr.2 in an assembly that requires a Gr.8, it may simply fail at the operation load.
=> Simple enough - Right? But wait....
If you use a Gr.8 where a Gr.2 was expected, and someone identifies it as such and tries to tension it to the higher spec, the threads may get ripped right out of a critical casting. Manufactures (good ones) actually design the thread engagement so that the fastener will (hopefully) fail before this happens.
As for an answer for your second....

So, if I use a Gr8 instead of a Gr5, should I torque it to the Gr5 spec?
Or is that not going to stretch the Gr8 enough?

Right. Look at the stress-strain diagrams in Matt's presentation and
you'll see that all grades have the same slope up to their yield values.
