I'm in the process of replacing the tape deck with a small single DIN
Pioneer unit (no CD, just BT/Radio). The tape deck was getting it's power
from a cable that was shoved into the back of the power boost switch and
taped in place (power was coming from the house battery side).
I want to wire this correctly. There is a yellow wire that wasn't
connected but looks like it might be from the original radio, is that the
12v source? There is also a pink wire in the fusebox labeled radio, I'm
not seeing where that wire comes out in the dash (possible it's fallen down
behind the air vent).
The speaker already have new speaker wire run to them, so I think I'm fine
there. I also understand there is a gray wire (part of the dash lights)
that really isn't the ground wire and I should connect ground somewhere
else.
Also, is the Radio always on, or just when it's in the ACC or ON position?

There are a couple of differences in your new Pioneer and the original Delco. It wants both continuous pwer to hold the station memory, and switched power from the ignition so it goes off with the ignition. If you want to run it off the house battery, simply hook both of these together and pick up 12 volts from the house fuse panel.
As to the speaker wires, please remember, your Delco radio had one side of each speaker connected to ground. This will not work with the Pioneer, neither speaker wire is grounded in it. Therefore, you need two wires to each speaker. If that's what you ran you're Fat City.
I'll point out, the original 10 ohm speakers will work without problems when properly connected to your Pioneer, but a set of new ones will sound better. They're available in the proper size from Amazon. If you look at my albums on the photo site you'll see what I used, others have installed substantially better ones - the Amazon ones sound good and they're cheap.

I don't want to run it off the house battery, I'd prefer to have it turn
off with the ignition.
There is new speakers and speaker wire run, so I'm good there. Just want to
make sure I'm getting power from the correct place.

Lots of people have changed to run the radio off of house power I did when I upgraded to a new unit and it's nice to turn the stereo on while hanging out working on the coach without running the coach battery down. Just saying

OK. To run it off the truck battery. Get out your friendly voltmeter and start looking at the fuse box. Between the rows of fuses are two tabs. One is always hot, connect it to the wire Pioneer says is always hot. I think the other is switched, check it. If it isn't, check the wire marked 'Radio" you mentioned and see if it goes on and off with the switch. If it does, hook it to the pioneer lead which wants switched 12v. If it doesn't, poke around with your meter till you find switched 12 volts. QWhen checking the 'radio' wire, remove the fuse marked 'radio' and see if the 12 volts disappears on the wire. If it does, you even know which fuse you're using. Or look at the wiring diagram, it will tell you which wire by size and color. If the original radio was there, the wires will terminate in a connector which won't fit your Pioneer. Dike it off and splice.

Ethan, if you're not comfortable hooking up wires, run down a friend of mine, one John Anderson, who works for Reed's Automotive in Roanoke. He's also a ham. Lives out past Catawba on the Blacksburg Road, and your GMC will NOT go up his driveway. Tell him I said he owes me a favor and to give you a hand with it one afternoon late or Saturday, and I'll buy him dinner when I come up for the show this summer. Don't have him do it at work, he'd have to charge you shop rates.

You can get a good ground running the radio's ground wire directly to the firewall. Self tapping screws are your friend. Use a star washer.
I supplied power to the radio directly (fused) from the house battery. No big deal, but I can listen to the radio without needing a key in the ignition. Not always needing a key to work on the coach, but music is nice.
Radio memory is not a big issue because once you leave home, the stations change. Scan is a great feature.

My radio on my 77 runs off engine battery but key does not need to be on. It a Delco AM-FM cassette I sent to Antique Auto Radio to he modernized with line in. No worries about draining the engine battery when plugged in as I added a Yandina combiner so converter takes care of both batteries.
