Would this also be the best way to drop the blacktank (besides an 18k coach
lift) or would a much larger plate be necessary?

I've used my floor jack with a 12x12 plate on it to drop the tanks from 3
different motorhomes and also to drop my tranny and final drive; have done
the tranny several times this way and would do it again if I have to.

When empty, black tank is not that heavy. that plate, or a piece of plywood would be plenty. I would not recommend trying to drop a full black tank!
the difficulty in dropping the black tank, is access and removing the plumbing. I can only speak to my Palm beach with a passengerside wet bath, but you take apart the passenger side seat, and you can see and access the pipe that goes into the black tank there.
and you have to remove the toilet and toilet flange(my screws that held the flange to the floor were rusted and needed to be taken out carefully- the flange just screws off the tank ). and then there is a 3rd pipe that goes into the tank on the driver side, mine i had an access cover in lower cabnet that came apart for access.

dropping it down with a floor jack, or even lowering it down by hand is plenty easy. The floor jack works well to raise it up into place.

See above, the Toilet flange is the hardest part due to the rust and god knows what the PO may have done. The other fittings are usually slip fittings and you probably will want to replace those with rubber couplings when you put it back in.
It weighs nearly nothing empty, and do yourself a favor, let it dry out for a while after you drain it... You can let it sit for a few weeks, or put a fan or shop vac blower output on the toilet flange and push air through it up the vent stack to dry it...
