Hello,
I want to run some wires from the engine bay to the cockpit. Is there a preferred method? Should I try to use the existing wire routes or drill a new hole?

Dan, If it is just electrical wire, not something like the speedo cable, simple task. Remove the glove box. There is an existing wire portal on the passenger side of the firewall, very near the trouble light. Just guide your wire through the existing hole and grab it by reaching in the dash through the glove box opening. No need to cut a new hole. I have added several wires, using this method. Mostly 12v+ to power dash radio, Ham radio and additional power outlets, installed in the passenger "arm" rest forward of the ash tray.

I take all my wires on the far left from the front under the steering
unhelpful

I would try to run the new wire through an existing opening in the firewall. If you can't do that for whatever reason, do as Bruce suggested and put in a grommet to run the wiring through. I would suggest using some putty or sealant to fill the remaining hole to keep the cold/hot air and fumes out of the interior.
