I have build a pair of jack stands that are incredibly stout - so much so that I don’t worry about running the engine on the coach when the front wheels are off the ground.
I’m considering trouble shooting the cruise by running it with the front end up (and no tires).
Thoughts?

Probably won't work, because there is no load on the system. The slightest increase in throttle will cause it to overspeed and the system will react with too much action for the load on the engine. It can break stuff. You can see if it engages but you need to be at the controls to shut it down once it starts to oscillate.

as log as you are supporting the A Arms so the CV joint angle is not too severe you should be ok. As long as you don't hammer it...
Letting the a arms droop all the way would be unwise I believe, but probably not catastrophic. I mean I know I've had that happen while driving, that Has to be worse

I've done this on several vehicles except with the wheels on. Without the inertia of the wheels, the system may react too quickly but will give you a rough indication. What you need to be careful of is the possibility of burning up the diff if one brake assembly drags a bit more than the other. A slight drag will cause the other side to spin rapidly and potentially ruin the differential. If you run with the wheels on, you will be able to watch this closely.

Dolph,
We run our coach on jack stands all the time. I have 4T stands that I use for the from and 12T stands that I use for the back. As long as the use properly rated equipment then there should be no issues running and testing your coach. Our is up on stands when we do maintenance on it. I probably spend as much time under the coach as I do from the top. In the Fall we do a complete check and do updates at that time over a6 week period.
