There is something you are not understanding.
Unless one off your coaches has some really strange hardware, there is no 12V side of the water heater.
The electric element is 120V only. Those are readily available. There has been discussion about using a much higher rating element that is for 240V. It will be 1/4 the power at 120V, and the low heat density on the element will make scale less of a problem.
