When I did the walls and ceiling on The Lady, I found some really high quality work by GMC:

Don't know if they were saving money or just incompetent.

Used a very flexible kitchen knife to cut down the high spots.

Then I cut and fit 1" thick styrofoam panels. I used some welding rod (thin wire) to hold them in place.

Then used 'Great Stuff' expanding foam to fill cracks and gaps. the foam held the styrofoam in place.

The excess was trimmed off easily once cured...overnight is best. It's hard to cut until it's fully cured.

The new wallboard and ceiling went in over this.

NIce job on what you are doing!!
I did the same thing, only used High density double foil styrofoam. Then after Great Stuff, used foil tape over all of the joints. What a difference it made in keeping out the Hot and cold, in addition to sound.
Oh, BTW, take pics of the structure and add dimentions before you close it up. You'd be surprised how often you will refer to it after the new ceiling is up and you need to find the ribs. JWID.

Yeah looks great, considering doing the same now. Ceiling moisture proofed and vapor barrier all in one step. By the way, my insulating looks exactly the same.
