There are two bolts under the forward edge of the seating cushions that need to be removed, the the cushions and their frame structures are slid forward to release the rear attachment. The lift, turn, and carry them out of the rear ara.
They're heavier than you might expect!

Question: how critical is that piece of metal mounted to the cabinet that
the back of the couch interfaces with somehow? What is its function? The
wooden cabinets under the rear side windows are toast.

That cleat is very critical. If you flatten the settee down and then put any pressure (or weight) on the extended seat without the cleat it would bend down and probably break the two bolts that hold the front.
So, if you plan to use the settees then it would require you to rebuild the cabinets .or otherwise have a board across the area to hold the cleat.
