Anyone know off the top of their head how much coolant I need to drain before replacing the thermostat without causing a flood?

A quart? Come on now. Unless you run yours low, like Jim K does, you will flood the engine intake by only draining a quart. I drained a gallon and still had it running everywhere last time I swapped thermostats. Like Jim K just said above, a gallon and a half, at least.

FYI drained 2 gallons and the thermostat was dry. It also appeared to be stock, and not working. It was stamped 195 and even though I boiled it for nearly 10 minutes it never opened. The 6" hose from the thermostat housing to the water pump was like uncooked pasta. It wasn't leaking, but it crumbled in my hands.
Anyone working on these motorhomes should consider getting this set of hose removal tools. They are incredible. They make removing old, hard hoses in hard to reach places easy.

Looks like a good BBQ set as well. The more you drain the better so you can add more fresh coolant/distilled H2O. Did you stay with the 195? Modern thinking supports that temp for minimizing water in the oil.
