Has anybody rebuilt the engine hatch? I need to build one that's about 1 1/4"higher to give clearance to the air filter.

No I haven't, but could you just fasten a 2x2 spacer around under the edge of it?

Actually my PO installed a very nice fiberglas hatch that is raised by maybe 3"

What about snorkeling it out to a remote filter element? Beats tripping and whacking your head.

Pretty straight forward. Cut out a center portion of the existing hatch,
however big you want it so you have clearance for your preference in air
cleaners, then, add risers (sides) inside of the hole and fasten the piece
you cut out to the risers.
Here's pics of how I did mine:

Don't forget to allow clearance for the plumbing if you plan on using a
remote filter.

Kerry,
You're the Aluminum guy, new opportunity here! The cover would have to be strong enough to walk or stand on and not collapse down onto the air intake. I believe that what Steven showed in the pictures is a Darrel Pagent TZE+ hatch cover. That is no longer available, because Darrel is out of the GMC business. It is possible that someone might still have one that they did not install and possible might sell. So do not expect it to be cheap if found! The way that Steven showed how he did his (starting but not finished) is an alternate solution to the problem.

You might try D.J. Eberhart in Sheridan ,Or. He had fabricated some all
aluminum rise type hatch covers. All four sides were angled towards the
center which was flat. Neat piece..

When I installed the Caddy 500 I had your problem and used 2x2s to raise the hatch. I didn't like the hump in the floor so I found an air cleaner that I could use.
Here are a couple of photos that show what I did.
