Richard, Lot of "Stuff" under that cabinet. Buzz box, 12v fuses, Toggle
breaker for shore/generator switching, water drains, etc. You don't want
to bury that stuff too deep. Water Pump and fresh water tank under pass
side bunk, Ride height compressors and controls under the driver side bunk.
Don't make anything that covers this up too permanent. You WILL BE GETTING
IN THERE.

Yeap, lots of stuff under there and that's why I don't like the current setup. PO has hacked the night table and moved it just aft of the wardrobe closet. Big mattress throw over the whole thing. Not a big fan of sleeping across the grain (port and starboard).
My plan is to rebuild the box between the beds so that it's flush with the twin bed platform. The night stand will sit on top of it's original location but it will be removable so it can be set between the twin beds at the most forward point. The gap between the non movable night stand base and the nightstand can then be filled in by a table top. This would basically give a flat surface port and starboard, for and aft in the rear berthing. The twin mattresses could then be slide together or even replaced by a king. Folding upper bunks are simply for grandkids and such.
