Mamma got a nice bonus and wants a new fridge in the GMC cuz the norcold is nearly dead.. we're going gas. recommendations?
What units fit the best?

I HIGHLY recommend the Norcold 641 series:

I went with a three way and I run it in the 'automatic' position. It works great. Much better than I expected. I know a lot of people just have a two way (no 12 volt option) and either don;t run it at all while driving, or run it on gas. I like the 12v option, even though it mostly just keeps it cool while driving.
The fridge is a little narrower (maybe an inch) and a little taller (about 3/4 inch) than the original all electric Norcold, but since you have a gas fridge now, it might just slide right in.
It was Kathy's birthday present last year, and we love it.

Thanks Carl, I don't have a gas fridge yet. I am planning 3 way, we had one when I was a kid and it was the best way to go.

I can't vouch for the 3-way, however we just installed the Norcold 641 2-way and it works great!

I have the Norcold 3 way in my coach, installed by Sirum for the P.O. Works great. It has a fan and switch, which simply points upward about halfway up the rear of the fridge, and keeps the air flow going up and out the upper vent. I turn it on daytimes in hot weather. It's a simple 12 volt case fan out of a computer, looks as if.

Chris,
Another thing I like about the Norcold...Made in the USA.
You can download their installation instructions on line, or I can scan mine and email them to you for reference. If I remember correctly, it was closer in size to the original than a similar Dometic model.
The only thing I would do differently on my installation would be to space the fridge out about 3/4" into the coach. I think it would look better and have just a little less angle on the 'flue'. You will need to build a baffle system behind and above the fridge, in order to make it run as efficiently as possible.
