Hmm.. Ok, as a disclaimer up front - I worked at Dometic years ago in the training department (side note: at that time I was fortunate to work with Mr. Erv Troyer, one of the best hands on product engineers I've ever met, and whom I'm sure some of you will recognize from GMCnet). I'm sure my memory has gotten a bit rusty, but I do recall most of the non-technical basics. Our department wrote a lot of the service literature for both Dometic and DuoTherm and we were constantly "boiling down" engineering specs/lingo into something that could help Joe and Jane RV owner understand how things worked. The links provided got me a bit curious as to how the current literature explains what for the average Joe is magic. So, I thought I would take a peek.
 
Rob, although I certainly applaud your researching this information, I would not recommend the first link to anyone. I have a fair grasp how these systems work and I had a hard time understanding some of it... not to mention that is has more than a few flaws and outright omissions.
 
The second link to the video is much better, but still takes a bit of a license with the physics. However, to anyone but a chemical engineer, it will more than suffice.
 
Finally, I really like the FAQ's link from Thetford/Norcold (gasp.. did I say that? I hope my friends from Dometic are not on this list!!) We used to get tons of questions from owners who were either ill informed and often thought they owned a compressor refrigerator. I skimmed through the FAQ's and they more than adequately addressed about 90% of the typical questions one gets from Joe and Jane. Between the video link and the FAQ's one can get a pretty fair idea of how these things work from the layman's point of view.
