I don't have the GMC here to look at. To do the outer boots and pull the shafts, I'm guessing I need to remove the inner bolts that go around the perimeter at the inner joint? I believe these are the ones that come loose if you try to reuse them as they are stretch to torque? Does Jim K stock and should I order so I have them?

Clean the bolts and use blue lock tite and there is no need to spend
money on it.
Keep in mind that you'll torque them more than other bolts the same size.

Before reusing the bolts, line then up next to each other and check the threads. Check that the threads have consistent spacing. If they have been stretched, the threads should show it. I would not recommend reusing stretched bolts in this application, even with lock-tite.

Our GMC vendors (like Jim K.) carry the "correct" bolts. McMaster-Carr carries a bolt that is very close to OEM and works well, for a bit less.

I would even use lock-tite on the new bolts.

Mike is right. It is not a fun time when one of those axles comes loose. While it does not happen often it does occur. This is very preventable by just checking to make sure they are tight. You can do it from the top side although the 2 bottom ones are easier checked from below.
