Of course you probably don't even realize that you are spelling it wrong!
In New Mexico, which is the Chile Capital of the World and grows the best Chile in the world, it is spelled CHILE, not CHILI.

Emery, two items I have checked off my bucket list is the Las Cruecas Whole
Enchilada Festival, and the Charma weavers. Also met some native potters in
some of the pueblos near Taos that took me in and treated me like a brother,
(although there was considerable alcohol consumption involved, which may
have affected their judgement) The Balloon Festival is a sight to compare
with the Grand Canyon, particularly at first light when the balloons are
inflating and lifting off. But this stuff pales in comparison to the Chile
inspired food in NM. I really got some good tips for that kind of cooking
while there.

Finally, a subject I can sink my teeth into...
And all this time I thought that the best chile came from Cincinnati. No
offense to anyone, just what I was told.
So, will NM be represented in the chile(i) cookoff in DuQuoin? How about
Cincinnati? This could be more popular then the pinewood derby.

Sorry, just can't resist chiming in here.
Chile = those marvelous green (or red) things grown in New Mexico which are hopelessly addictive.
Chili = that stuff from Texas (typically) with beans, spices, and often meat and tomatoes.
New Mexico food is unlike any other kind of "mexican" food.
But to most people, a "Chili cookoff" involves Texas-style bean or meat dishes. The cowboy hats are a clue.

Sounds like Chili(e) lovers are a lot like Barbeque lovers.
If it isn’t covered with some kind of sauce or something AND come from a pig… it is just a cook out! (Just what I have been told, I barbeque chicken, beef and even zucchini.)

Anyone even considering volunteering to be a chile taster needs to read this:

Most of what you call Chili east of the Mississippi we call Texas Chili Soup.
Real Chile has no meat and no beans.
Those are Chile Carne or Chile Frijoles.
