I'm getting ready to replace the old, rotting galley countertop, and was wondering if it can be easily unscrewed from the base cabinets, or does the whole module have to come out as a unit?

Just remove all the screws that you can see under the counter and the
few you can't and it will come off. No need to destroy the base.

Depends on the Top, mine was screwed from the bottom up, others I have seen have been screwed from the top down and are covered with Mica. There is a length of angle iron which is the brace for the top, located along the side of the Coach at the back of the counter top. It has screws from the bottom up.
I removed the entire galley when I did mine.

I removed the stove, and see the screws attaching it to the closet module, but I haven't taken out the sink yet. I'd like to try to preserve it (if needed for measurements, etc.), but if it's easier to remove the entire cabinet assembly and take it apart outside of the coach, I would consider that option. I don't think it would fit through the entry door (but I haven't measured yet).

You don't have to take the whole cabinet out. Just remove the top. You can leave the sink attached to the top and take the sink out with the top outside the motorhome if that is a bit easier for you.
