How much are you into making your coach truly stock?
The reason I ask is, I picked up a full set of Palm Beach seating a while back. Many have switched from dinettes to couches or bucket type seating. It might be easier to find discarded "GMC" items. Possibly even local to you. (Shipping is more expensive than many used dinettes are worth.) The "GMC" style do not have the odd padded thing on the end of the seat. Without measuring, I think the GMC Dinettes are a little narrower than the ones in my Birch.
OR... You could build a wooden framed dinette. While not as good as seating, I find the foam cushions better for sleeping. Metal famed seats are a little more flexible... you can change the back angle.
I have seen wooden framed dinettes with foam cushions in some Birchavens. A few where VERY nice. While this was common in the 1973/74 GMC coaches, I do not think they where stock in the Birchavens.... unless they where VERY early (1976) Birches.
