If you're looking for a used original one, Mike Bozart @ GEMRECS can probably help you. New, custom ones are usually the Mac Dash ones. Either of the Jims can help you on those I believe, or his website is www.custominstrumentpanels.com.

You can buy through the Jims or directly from Mac McNeal the guy behind the
company. Personally, I'd deal directly with him. He'll give you lots of
options.

I was down at the GMC Co-op and I saw that Jim B. has a Mold to make new ones out of FRP.

I was just thinking that JimB at the Coop Resort had been designing a dash a year or so ago and he might be ready to produce some.

At the time I was there, I had strongly considered a new dash, part of the reason was because my AC was NIL...

I have since installed the underdash AC and did some work on my OEM dash so I'll probably stay with the OEM now.

Check with JimB and see where he is with that dash he was working on.

LarC ( Removing the OEM and building a new dash, gages, wiring, air ducts, etc, makes me a tad bit nervous )
