I was gonna use easy off until I saw it was not for use on aluminum (it decarbonizes iron heads like $hit through a goose) so what's the favored way to get the crud off? I have some gun bore solvent and carby dip that both like to remove carbon, that sound good?

It took only minutes to bead blast the heads. I reused the old
gaskets after applying many coats of cheap silver paint to each side.
Has performed flawlessly since. (Did have to adj the carb though as
the decarbonizing made a significant difference in mixture.)

Put it in water for a few days, it will come off.

Bead Blast or use a fine wire brush in a dremmel tool. The dremmel will take you longer.

Actually I wound up using Berryman carby dip for soaking the heads and a fine wire brush. it did a good job of softening up those stubborn carbon deposits. the heads did have a fair amount of carbon in them but I've seen worse in some car engines...

When I put the heads back onthe onan however still no dice in the erratic operation of the onan...

Could anyone guess if running the beast on propane for a while would
achieve the same result?
