The "grade" of the bolt is 2 more than the number of radius marks on the bolt head, as has been said, 6 marks is grade 8. (0 marks is "butter", don't even make good tent pegs !!!!)
I've seen 12 marks(grade 14)

I checked the 3 pork chop bolts I had easily available. They have 6 hash marks, and thus are grade 8. I don't believe a hardware store bolt is the best as it will not have the rounded end that fits in the pork chop.
