That is because in tests run in the early 70's it was discovered that wide gaps and hot sparks reduced misfire and therefore HC emissions.
But the fact became clear shortly after the release of the HEI that 0.060 was too much for the hardware. OOPS

Gap is really important to over all performance, but too wide can be tough on the systems unless they are built up from OE.
