This article pretty much says what those of us mechanical guys that have had thermal battles can tell you...

It doesn't take much of an air gap to be an effective heat transfer block. It doesn't matter whether you are for or against, that gap can greatly interfere with heat flow. If you want it, it can stop it. That is pretty much what that whole article is about.

Now, if you want to know the why for silicon grease, go back up the page. If you want to know why the white stuff (zinc oxide, barium titanate or etc), that is just to enhance the thermal conductivity. (And increase sales)
