Very interesting. Looks like all the parts of a normal Birch rear bath, just arranged a bit differently. In the pictures it looks like it left the factory with something close to that layout. (It doesn't look like the refer door was moved.. ect.)
The dash looks like a 1976. (EL switchs in the center.)

A couple of interesting things about this Birchaven. The GMC Transmode is an early 1976 TZE (0832) and has the 1977 Coachmen paint and stripes. To find an earlier model year "chassis" on a later finished motorhome is not all that unusual. You would usually expect to find a late production 1976 to end up on an early 1977 completed unit. There appears to be a very large gap of time between the build of this Transmode and the finished Birchaven.
There is one other Birchaven floor plan that switches sides of the dinette & couch that doesn't show up in brochures. This one appears a dinette was replaced by the second couch with non matching material. To me the more interesting thing is the large gap in builds. This could be answered if the Coachmen build stickers are still on the interior, the build dates would then be known.
