Notice what it says about operating temperatures for Chevy truck clutches.

Notice that fans are always turning at least at 20% of engine speed. As to
the question of clutches engaging at cruise, consider that all the cars I
have with electric fans operate the fan continously when the A/C is
switched on. One of them is a Porsche with both an electric fan and a
mechanical fan with a clutch. The electric fan starts as soon as the A/C
is switched on even if the engine is running.

Not sure where the theory that a fan can block air flow through a radiator.
Guess it could it if stopped but that is never the case.

I sometimes think GMC owners look for problems and are unhappy when they
can't find any. As far as I am concerned, engine temps anywhere between
180 F and 220 F are OK. I expect to see changes in engine temperature as
the load and outside temperatures change. I don't care how often the
clutch cycles as long as the engine temp stays below 220 F. I have both
the factory temp and an aftermarket temp gauges installed. The factory
gauge is very sluggish and often does not change going up and down hills
while the after market gauge goes from 190 F to 210 F and back to 190 F.

I have a 2001 Buick and when I watch the factory digital water temp readout it varies from 189 degrees at highway speed and maybe later on the same trip will run at 200. Setting in traffic jam on interstate in stop and roll 200 feet traffic for 75 minutes, outside air temp over 94 degrees, my gauge went to 220 and turning off A/C made no difference in coolant temp. My GMC after market temp gauge stays on 210 degrees and the movement as I travel up and down hills or flat and level it never moves more than a needle width which might be 3 or 4 degrees. But the fan clutch will come in at highway speed on hills or flat and level for 1 to 2 minutes every 4 to 10 minutes depending on outside temp. If outside temp is under 80 I never hear the fan. It all seems very hard to draw conclusions from all the different reports given on this subject. I'm going to quit trying to understand it till I see gauge readings too high or coolant on the ground.
I checked the temp gauge in boiling water and it read as close as I could interpolate to be accurate at 800 ft above sea level of 211 degrees. I have a 195 degree thermostat and rebuilt radiator with extra tubes added.
