I had an idea about that: sink cover.

That would be OK if the sink was an under-mount - did not stick up above the
countertop and you could miss the faucet. Seems to me that anything that is
a flat surface accumulates 'stuff' and when it comes time to open the
extension I would end up having to move the 'stuff' first. That was the
case with the cover over the stove - every time I wanted to get at the stove
I had to move everything that had accumulated on top of it since the last
time it was open - no more cover this time. I think that my plan to have
the extension stored upright, separating the kitchen from the sofa will work
out nicely.
