Stock was a “see saw” breaker interlock that turns one off and other on so shore or gen NEVER BOTH. Flip the switch!

It might be like mine which had electrical upgrades 25 years ago. I have a ATS mounted behind the seat back for the rear dinette, have to remove the seat back to get to it. It has a 30 second delay after the generator starts before it switches to it.

Evan,

Be SURE you don't have both the Shore and the Gen CB's closed at the same
time! The results could be catastrophic, probably to the generator.

You may want to consider this automatic transfer switch rather than a
manual switching arrangement:

I very much like the convenience of my automatic transfer switch... If you go that route, I had read to make sure the switch has DC relays, or they tend to hum loud enough to be annoying, since our switches are in the living area vs in a basement like on some larger coaches...

There may be other ways to make them quiet, but going with the DC relay based ATS worked for me....
