Is there a way to regulate the temp for the hot water heater on a 76 Palm Beach. Water is scalding hot!!! Not wanting to have change it out if I do not need to....

Was the water heated by the electric system or by the engine coolant loop through the water heater? If you had the engine running anytime in the previous few hours the water will be scalding hot. There is no easy way to control the engine heater loop. If was heated by the electrical element then the comments made by others are good.
To solve this on our '74 I installed a thermostatic mixer valve in the hot water line.

We have an Atwood Hot water flow controller, it senses the heat at the tank
and supplies engine vacuum to shut it down when it reaches a set temp
