I was wondering why Header Wrap was not used or talked about more often with these motors. I know by using the wrap it increases out going exhaust temps within the exhaust pipes. Is there some adverse effect it has on the system?

I had it on my headers in my 240z to reduce the radiated under hood heat that would impact my side draft carbs.

Yes, it lowers the under hood temps, but, if your headers are not Ceramic
coated inside and out, their life will be shortened.

For some reason lot of headers rust out quickly when wrapped so they All
refuse to warranty them.
These Ceramic coated units do a good job of cutting down on heat.
My twin turbo coach does well with that coating

The problem is holding moisture against the header tubes during long
periods of non-use fosters corrosion.

Thorley did not nickel plate them. That actually is a thin ceramic coating. I know this because I once spoke to the Thorley factory about it.

At the time, it was a choice, and the ceramic coatings were white. This
looks like chrome, and the price was significantly less than the ones call
“ceramic coated”. We’re talking 15 years ago, when we bought them directly
from Thorley.

Well ok. My awesome PO installed Ceramic Thorley headers so I guess I'm set. One thing he did say is that occasionally the exhaust gasket blows in the middle and he left me a few extra gaskets. What's that all about?

Probably the type of gasket. I have had real good luck with Remflex hanging in for years. They do make for headers or manifolds as they are different.
