I plan to test several methods of protecting heat buildup in my gas tanks. I
plan to 'protect' one tank and leave the other as is during these tests. I
plan to access the fuel flowing through the gas line forward of the switch
so I can switch tanks and measure the temperature of the fuel with a probe
of some sort. Same conditions outside temps, exhaust etc. It should give me
a great look at my "protection" methods.

So does anyone have a suggestion on the temperature probe to go in that fuel
line?

Well that won't work unless you block off the flow between the two tanks.
There's a connector that keeps them connected until about 1/4 tank. Fuel will keep flowing back and forth creating and ruin your experiment.

You need in tank senders to get accurate temps. My tanks are not connected and have separate fills. My rear tank is from Golby and has a port with a temp sender. The original front tank does not have a sender. I added a fuel filter inside the frame rail and installed a second temp sender in that filter.

The senders do not agree when the coach has been sitting overnight. That error can be calibrated. What is more problematic is that once out of the tank fuel gains additional heat. At highway speed it takes about 10 minutes to burn a gallon so gas has plenty of time to warm up once it leaves the tank. Having that large filter cannister inside the frame rail doesn't help either. It did stay cooler after wrapping with insulation. So far I haven't had any vapor lock and thus haven't made much effort to read tank temps.

I recall reading about someone who modified his coach to have three tanks and used a center punch then tapped the whole to create a port for a sender.

To answer your question. I used VDO 250 degree temp senders. They publish a temp vs. resistance chart so the senders can be read with a cheap VOM and converted to temp with the lookup table.
