You will get all kinds of answers depending on your location. Hot like AZ and TX or Cold like MN or Canada.
I put in a 190 from Jim K and have been happy with it.
How are you measuring the temp and from where. Mechanical gauge I assume. or IR. Is the rest of your cooling system up to snuff. Is the fan clutch operating correctly.

With no clue what the coach is or where you are, this is really tough to answer.
But,
What you are seeing could be an artifact of low coolant or a sticking thermostat.
As this is not good for the engine, I suggest that you pull that existing thermostat and do a "Pot on the Stove" test. If any doubt remains, replace it. Either 180° or 195° will do, it mostly depends are where you will be driving.

Could be low coolant level. Can be cause by bad cap, dirty cap, loose or cracked hose to reservoir, or low reservoir, or a bad stat. They seem to be made of thinner materials these days. I have had good luck with the Stant Superstats with being very accurate in other GM vehicles and they help eliminate the overshoot/ overcompensate feedback cycling. The recommended stats vary in the listings as quality varies. I would go with 190-195. The stat has NOTHING to do with how hot the engine gets. It only conttols how cold it gets.
