78 GMC 403 engine dies on the highway. Sometimes restarts by itself,
sometimes restarts after coasting to the shoulder, sometimes requires a
short wait before it restarts. The last time, it didn't restart after
half an hour, so I had it towed 30 miles to a shop that is familiar with
GMCs, but is closed for the weekend. Left them the key and a note. Only
about 50 miles after a fill-up so not out of gas. I didn't check spark or
anything.
Any suggestions?

Ron, if the outside temperature was over 85° or so, I would suspect vapor
lock. If cooler, then I would suspect ignition module or ignition coil.
Either way, check for fuel and check for spark. Then call me. I will guide
you through corrective measures.

Ron,
Fill the tank ALL the way past full and fill up every 70 miles till Monday
when a shop is open.
Have the shop call me and I will instruct them.
