I don't know Rob since neither the Clasco nor the Royale have two AC units, but with nearly 50 amps to work with I would think so unless something was really amiss with one or both units. And, if they won't run on the Onan 50 amps they are not likely to run on 50 amps coming from shore power if the coach has a 50 amp cord and plug set. One thing to check is the Onan output breaker. Some of those are too old and weak to pass the full output of the Onan without tripping.

Do you think the Onan could handle the start up current of the two Onans if the water heater and/or other items were on?

Jerry,
You are falling in to a trap that gets so many in RV Land.
A 6kW electric plant can provide 50Amps at 120VAC, BUT a 50Amp RV service is 2ea 50Amp lines are 120VAC. That is closer to 12kW.
As neither of your coaches has more than one A/C unit, you will be hard pressed to need all 6kW very often. So, if the conversion to LP is good for you, go for it.
As it is, I have 4kW (BF) that we can strain if the right circumstances present and we have a smaller LP tank. I'm not considering the mod.
A little bit of history here...
In the 70's larger coaches were coming on and the RV industry was going berserk. It was universally believed that 50Amp service was the wave of the future. For RVs it might have looked that way, what with microwaves, more A/C, the move to more electrics....
So, many manufactures of period went with the 50Amp capable shore power.
But, nobody asked the crampground owners what they though of the idea of nearly doubling the infrastructure investment.
The trend died off with that first oil embargo and the number of RV builders plummeted as well as the number of people willing to try to travel that way.
When the smoke cleared, the monster RVs were remembered as dinosaurs and it has been years coming back.
