your hose is probably old.
I replaced the hose in my 26' and it is very pliable. I am not sure what issues would be caused by downsizing since most new RV's use a little smaller hose, but my new hose flexes very easily.

Even they seem more than necessary considering that the 11" H2O column
pressure they see is only about 0.4 psi.

I'm not sure which part of the original propane hose you are talking about, but most of it has a protective wrap around it which the hose that you pictured does not. If you only use it where there is no abrasion or high temperatures, you should be fine.
