I'd read that these are both the same generator, just that the EV is set up for motorhome use, and the ES is set up as a portable genny. Is anyone familiar with the layout differences between the 2, or has anyone successfully installed an ES6500 into a GMC? Since the ES is commonly used as a backup generator, it seems quite a bit easier to find a low hour unit....

They are similar, but use a gravity fuel feed and have an eco throttle sort of.
You'd need to add a fuel pump.

Add a pulse pump for gravity feed sets. An electric pump will usually overcome the float valve in the carb.

It will work on an Onan. It will also overpower the average contractor genset with a gravity feed tank. Ken H uses an electric 2 PSI as a choke on his'n. I'm gonna mount a solenoid on the choke lever on mine. The Mr. Gasket pumps >will< flood my heathen chinee set, I tried them - I have two mounted for the engine feed on my coach, they work well in that service. They're too much for a gravity feed tank system. The Onans always expected an electric pump. I wouldn't put one on a Honda contractor gravity feed set without first testing it.

So use pulse type fuel pump, or swap over to an EV carb/float assembly...
What about the 240 volt on the ES6500? Are there 2 legs on the EV6010? If there are, are they in phase or out? Anyone know if the 2 gensets are laid out the same?
Sounds like if I go down this road, I will need to be the ginea pig...

I put in a heathen chinee genset which is 140. They have two legs, use a split bus breaker box and single breakers and you're done. And if you ever want 240, a double breaker gives it.

Doesn't matter if they are in phase or out, as there are no real 240V loads on the coach, and when you are plugged into 50A shore, you have two legs out of phase, and when on the genset, both are in phase. Coach electrical is designed to handle either situation.

Actually, that 240 V is one single phase. When split into two 120 V
circuits at the center tap of a distribution transformer, phase does
NOT change. The instantaneous polarity of the "hot" side of each of
the 120V lines is opposed, but the actual phase is just one half of
the single phase.
Has Chris states, an original coach with the 6 kW Onan handle either
situation without any problem.
