Held in with strips that have a plastic cover, remove the cover and you will see metal strip with screws, remove the screws and panels with either drop or pull out. Depending on how much your ceiling has dropped you may need to jack up the roof stringers to relieve the "pinch" between the roof and the built-ins. Also you will need to drop the overhead cabinets held in with two bolts in rear and two bolts at top front of each section.
I just finished my headliner redo and used Jim B's method, 2 foot pleather glued to luan sections held in with an aluminum H strip that is pop riveted to to roof stringers working from the back to the front. I would suggest calling Jim B and he'll walk you through it and send you the H strips.
