I have a 663 in mine but a check of the Norcold site shows that is the same dimensions as your 641. It says it needs 52 7/8 x 23 1/2 x 24 cabinet.
My 1977 cabinet fits just fine. I believe I had to open the width a little and perhaps the top of the opening to get it in.
I removed the curved thin plywood at the back wall and that gave me plenty of room.
For your gas line, if it is running in the wheel well you should move it by drilling a hole through the right side of the propane compartment near the top rear. That will allow you to run the line under your water heater and then through the lower back corner of the refrigerator compartment. That will keep the line protected while having the fittings outside in the propane compartment and in the refrigterator compartment. I used a short propane hose inside the propane compartment that I bought at an rv shop.

You might want to update your regulator with a two stage regulator.
If you are going to hang more weight from your propane tank valve you should check your pol fitting to be sure it will take the weight. See here:

While you have the refrigerator out you could insulate the box and make sure you have a baffle under the bottom of the fins.

Some have actually let the refrigerator stick out into the coach more.
That also allows for more room for an on demand hot water heater behind the
refrig.

I can't address the size of the cabinet on any other coach, but I found the 641.3 fit okay in terms of the depth. It is about 1/2" narower and 1/2" taller than the original fridge, but that was easy to modify. I DID end up adding a 3/4" piece to the front of the opening to bring it out just a little. I think you'll find that the top of the fridge, where the cabinet is the shallowest, is not as deep as the lower part where the coils are located. It should fit - no problem.

We generly nuild a frame arounf the gap and make it look like a trim around the unit.
The coil will touch the wall in the back.

Thanks for all the suggestions and comments. This place is great!
Now it fits, I extended the entire cabinet trying to maintain the same large radius corners...and look original...turned out ok..still need toe kick and fix seam at bathroom wall, I'm thinking of installing chalkboard panels and currently investigating options. I was worried about it working properly, I was at 3.5* tilt and it wasn't cooling on AC, turned it up to 9, left it overnight...it was -10*F in the freezer this morning! Yeah! Propane not hooked up yet, still deciding if BBQ tanks would be more convenient...than restoring/replacing DOTtank...

You mention replacing the DOT tank. GM did not use a DOT tank. GM used an ASME tank. The DOT tanks require periodic testing. The ASME tank (which should be the tank in your GMC unless a prior owner changed it) never needs testing or recertification.

Just be careful about the location and depth of the holes you drill.
