I am planning the same approach to the electrical needs for my coach so am looking forward to the responses.
Have you considered these guys for a swamp cooler? http://turbokool.com
Should do the job quite well without going the12v to 110v conversion route, or is that a better way to go?

I've also wondered about an A/C, you can get 50 amp 12v (so 600w) units for
cooling truck sleeper cabs, that's 9000btu, not far from the typical
13-14.5k btu roof top units. Granted, people commonly run two of those, but
9k, insulation, and perhaps some care about how you park your GMC? And a
swamp cooler? I also thought about using the swamp cooler as a source of
cool air for an intercooler, so you can get cool, non humid air (and just
dump the hot, wet air, and since you are doing that, use greywater(though
that would muck up your evap unit faster)?). 800 watts or more should be
quite doable, the eklektro guy had 1000w on a 23' coach. Of course, since
your solar pannels are nottilted, you will not get 100%.

you might also consider installing an openable rv vent/skylight
in place of the original fan. Makes a HUGE difference in how appealing
the bathroom is, and means not having to use the light at all during the
day.
Just a thought.
