Just took out the kitchen counter, stove and sink/faucet. Is there anything special about the sink and faucet. And its connector fittings?

I want to replace with new components. I heard a rumor that the faucet is unique to the GMC? But cant figure out why, if that is in fact true?

The sink seems pretty shallow as well?

It's an RV type faucet, which is a bit smaller than residential. I bought mine from Jim Bounds, and I would think that many RV supplies also carry them.

I replaced mine with a Moen from HomeDepot. It fit and attached just like any faucet at home.

While you're in the neighborhood, you might want to consider installing a water filter, too. I put in a separate small spigot and valve with a single stage filter, beside my kitchen faucet (but centered on the other part of my sink). I figure it can't be a bad idea to filter the water that's been sloshing around in my tank, and that's been in there for quite a while (if only as much as I can't pump out before parking it). Even though I filter the water going in, I like knowing I'm not going to be drinking any chunks... Confused

The main thing you must need to address is that it have one hole through the center.
We have one that we sell that is less in price than the Mohen brand.

I used a bar sink faucet, with a pull down rinser. I like it. I also did the small water spout with it's own filter, standard RV stuff. Additional filtering in very nice.
Suggest looking at bar sinks, but they may require a new countertop.

It's the bathroom wet bath diverter faucet that is unique and no longer available.

My beloved PO had a Corian counter top installed with a deeper sink. The problem is that the slope on the drain line with the deeper sink becomes uphill unless the TEE in the drain/vent stack is moved down. On mine the dumbbutts just bent the drain line down and hooked it up. It ultimately split at the glue joint on the Tee and would leak severely when the sink was drained.

Here's what I did on my counter top, sink, stove, etc:

As I recall, I found most of the parts at Ferguson Plumbing Supply but had to get a few RV specific connectors for the water lines from an RV supply. I also had to adapt the standard household 1-1/2" drain to the RV 1-1/4" pipe.

As Kerry said, The drain slope is negligible, but with the right fittings I was able to make it work.

That came from Colaw RV Salvage. Surplus from Winnebago IIRC. It only cost about $85.00 and increases the counter space by a whole bunch! It even has electronic ignition.
