Is 205 degrees coolant temp while cruising on flat highway too hot?
Outside air in the low to mid 80's, not towing.
T Stat 190.

It's not TOO hot but if everything was in good shape, I'd expect it to be about thermostat rating in the conditions you describe.

My 77 403 with the aluminum radiator runs right on the thermostat rating unless I'm on a long pull (usually towing about 3500 lbs)

I'd suspect a partially blocked radiator. You can check for that with an Infra-Red heat gun. Also, rubber flaps on the side and bottom of the grill opening will direct more ambient air through the radiator.

Ours has always run right at the T stat setting too, even on the trip to get the FD changed out from 307 to 370, On the way home now the temp runs at 205. The Radiator has no blockage and the coolant is fresh and at the right level. Wondering if the fan clutch started to go just at the same time the FD was changed out. Spun the fan blade by hand while the engine was cold and hot and it only moves about 1/4 turn and stops. Seems ok to me.

If 205 is actual.
I would check to see if it reads that at idle as well as cruse.
There is a possibility that your fan clutch might not be functioning too well.

Might be time to change the thermostat. Not all of them fail open. The ones that don't could degrade to not opening fully.

it is also posible that the gauge is 15 degrees out of calibration.I would check the temperature of the thermostat housing,the gauge sender and the upper radiator with a temperature gun before I got too excited.

From cold start the T stat opens at 190+_ and the temp drops to about 175 very quickly,( this would indicate to me that the T stat opened as it should,) then climbs slowly to 190+_ and pretty much stays there at Idle. If I rev to 2500 rpm the temp rises to about 195 and stays.

While driving I find at 2850 rpm the temp stays at 205, At 2500
the temp is 195-200.

I will check the temps tomorrow with the gun, however, like I mentioned earlier, the gauge has always been steady at 185-190
since I purchased the Coach 4 years ago.

Checked the temp at the sending unit today 189-190 vs the gauge reading 185 not too far off

The PO left several spares in the Coach, one is a GM fan clutch still in the Box, P/N 4367. Cannot find this number anywhere on the forum. Anyone know if this is a good number?
