New owner here, picking up new-to-us GMC Edgemont today. Simple Q to begin.
Use 50 amp plug in at campsite? Assume factory spec coach.
What happens if we use a 30 amp plugin instead (example, if that is only
avail option)?

Just plug your 50 amp plug into a 30 amp adaptor. You just won't be able to run 2 air conditioners on a hot day without tripping the 30 amp breaker on the post.

Welcome to the group, family, cult, asylum
If you get a 30amp "dog bone" it will power both sides of the 50amp distribution system, but you will be very limited in what you can power at any given time. Things like you may be limited to only one AC. The waterheater and the microwave will also have to be considered as they may overload the post.
You will soon discover that being a GMC owner connects you to a community of helping caring people uncommon in the world today. This will help to make the coach an important part of your life, not just another toy. As I am a waterman, I liken it to they way we relate to our boats. That is why I have taken to welcoming new owner to the groups much as we would welcome any new owner or vessel. So,

as long as coach is stock, just buy the adaptors to make it simple. they are pretty cheap, if you find the right place to buy them.
I keep a multitude of adaptors for different applications.
Everything will theoretically work... but your power consumption might change. so you should match your power usage to the amps you have available.
I learned this past weekend that there was some limitations on what I, or actually my wife can do in the coach at once.
I did not use the A/C this weekend, but was hooked up to a honda 3000 watt generator, with a 30 amp cord/plug.
it had no issues running the microwave. and the coffee maker. but when the wife fired up the toaster, it did not like that. oh, and the water heater would of been on.
i hooked over to the onan and fired that up. 6000 watts with my 50 amp plug... and she had no problems running toaster, microwave, coffee maker, hot water heater.
I did burn up a 15 amp end on a 12 gauge cord, running my original A/C on the far end of my garage. That same cord plugged into the 15 amp outlet next to my panel, had no problems running the single A/C. so cord length and quality is important.

You do need a small collection of power dog ones. No telling what configuration that you will run into as you travel in your coach. Many of the State and Federal campgrounds only have 30 amp service. If your power has not been rerouted from OEM. Also, consider a heavy gauge extension cord. Typical 15a circuit will at least run the microwave or other small appliance, one at a time. Wal-Mart has a fair collection of dog ones, as well as Harbor Freight. I have only had to order one special dog one, to connect my 3.5 kw genset to the coach, if necessary. No working genset yet.

Many thanks to you all for the informative advice. We're currently awaiting
completion on a state safety inspection, then grabbing temp reg in O'fallon
MO.
Plan is to take 70e to 270s to 44 and stop for the night at an rv
park in/around Cuba. Unless anyone has a better idea.
The coach is supposed to be mechanically sound (per 2 different mechanics),
though I'm a bit nervous about 1st time driving. Thinking that roads w
shoulders (highways i guess) are prudent in case of mechanical fails.

For any beer lovers who pass by Cuba, MO on the way to Branson, take a short hop to the south to get to OLD 66, go east about 1/4 mile to Missouri Hick Barbeque and get some of their brews! Mighty good grub, too! They close at 9 pm, so get there before 8 pm.
