It has always been sugggested that you should dump the pressure in your bags when you jack up the rear of the coach. This can be done by putting the dash valves to travel while you jack it up. The coach goes up, leveling valve releases bag air trying to lower the coach. When you let it down it goes back to ride height.

Does one still place an 11x3x.25 plate or a piece of leaf spring between the bogies ?? What keeps the bags from fully extending before the tire will leave the ground??

If the plate lets the wheels hang lower that what would be ride height, the system should let the air out of the bags when the coach is jacked. (And the system thinks the rear is to high.) When the coach is lowered and the system senses it is below ride height, it'll pump the air bags back up. So using "the plate" would depend on if it still allowed the system to "work."
Note there are a few things to keep in mind:
1. The system works rather slowly and this might not be the best method for a "fast paced" shop. But it doesn't require a "tire monkey" to actually do anything... other than slow down.
2. The system needs to be "active." This is fairly easy for Power Level systems. Just leave it in travel with the key off until you lower the coach. Then turn on the key for the coach to lift itself off the lift. Either of the Electro-Level systems require power for both up and down. -- For a fast paced tire shop, it might be best to leave it in travel with the key in accessory. Just ask them to raise the coach a bit before breaking the lugs loose. (The system will let the pressure out as they do this.) They also should lower it slowly to keep the coach off the shop floor.

What breaks the shocks is leaving air pressure in the bag when you jack it up.
These metal or woods supports will not prevent you from breaking shocks and if you leave the air bag aired up these supports stand a chance of breaking the center bogie support casting.
All these do is save you a few inches on jacking height when removing a wheel. I have a couple of them stored somewhere in the coach but never bother to find and use them.
What is important is to get every bit of air out of the bags before raising the coach full up.
I jack mine up a few inches above normal ride height and then remove all air by disconnecting the air line at the bag. This takes about 15 seconds with a 9/16" open end wrench. After finishing my work I reconnect the air line and drop the coach slightly below normal ride height. Then I turn on the air system and let the bag inflate to normal ride height. After the bag has inflated to normal height I remove the jack.
Chuck's procedure ought to work also but I have never tried it. With mine you never worry about all of the air being gone and you never set foot in the coach until the final stage when you simply turn on the key and let it air up again.
Use the metal or wood pieces if you wish.
JUST REMEMBER TO REMOVE THEM BEFORE AIRING UP THE COACH AGAIN. As forgetful as I am I do not think it is worth the risk of forgetting.

With the wheels off the ground, consider putting blocking under the frame in case the jacking method fails. A simple stack of 4 x 4's can save you a very nasty experience?
