Grant,
If all those things worked correctly before you replaced the batteries, they should work better afterwards. Start by double checking all your connections. Assuming the house battery bank consists of two 12 volt batteries, make sure they are hooked up in parallel, NOT series. Also, make sure your battery disconnect switches, if so equipped, are turned back on. Hopefully the problem will be as simple as that to fix. Good luck.

This is a perfect example of how it helps to know what you own. Is it a
factory finished GMC or finished by someone else?
The electrics are different.

Something odd...
Normally, the leveling system and the Onan are powered by different systems.
I understand you have a 1977 Birchaven. As such, I am Ass-U-me'n that you have all 3 batteries up front. You say "3 12v batteries," as you coach started with only 2, how are they set-up? Do you have a single engine starting battery and a pair of 12v batteries for the house? I have seen older rear bath Birch's with one battery in the closet over the Onan, does yours?
I also am Ass-U-Me'n that the engine starts and runs and the only things not working are the Onan and Leveling system.
A '77 should have the first type of Electro-level (with one air compressor pump) and is powered from the ENGINE battery... at least as set-up from the factory. But some have changed the compressor power to a "stiff" power source and could have been connected to the house battery. (A high gauge connection to the house battery is already fairly close to the compressor.)
BUT....
Without more information, I would suspect a connection problem. Most likely something to do with grounds.
