The refrigerator cabinet is across from the "oven & range".
The edge that is against the dinette seems to be about 1/2" thick.
The part between the fridge and drawers seems to be 3/4" against the fridge with another layer of 1/2" on the drawer side.

I need the cabinet to be 3/4" wider than it is to squeeze in the refrigerator I want to install. Would like to remove the 3/4" plywood, but not sure the cabinet would be sturdy enough if I do.

Aham,
In my Gemini fit 23', there is a single piece of 3/4 between the drawer section and the reefer space. This could easily be because they needed that thickness to cut the rabbets for both of the two top shelves. If you pull out the drawers, you will find an extra 3/4 between the drawer side and the vertical panel.
There is actually a lot of inaccessible (wasted) volume there. I suspect that if you took out the drawers and carefully disassembled what you can, you might be able to cut out most of the 3/4 panel and scab a piece of 1/2 onto what was the inside surface of the 3/4 and not have to modify the drawers at all.
Word of warning...
If you are putting in a reefer that does not have the condenser on the back, then the condenser is the two sides. If this is the case, cooling them in a tight space is difficult at best. I made the provision and it is only barely satisfactory most of the time.
