YES.
The purpose of the plates is to greatly reduce the temperature of the intake manifold. The prevents several things.
1. Boiling gas in the carb especially on shut down.
2. Carbonizing of coil on the bottom of the manifold.
3. Cracking of the manifold from over heating.
It will also help in some cases of vapor lock problems.
You will have to make some allowance for your current hot air choke. Either go to electric or wrap a piece of copper tubing around the exhaust for a heat source for the choke.
While you have the manifold off, inspect it very closely for signs of cracking in the area directly below the carb. I sand blasted mine and repainted it but that is not entirely necessary but it make is much easier to inspect after it is cleaned up for painting.
