I'm planning on adding a second Carter, set up with one for each tank. Do I need to add one way valves?

I would suggest that a check valve in the discharge of each pump would
be a good choice.

If you eliminate the electric tank selector valve and replace it with a "tee" then yes you need two check valves. Otherwise the answer no.

I have been running dual fuel pumps for the last 10 years without any problems. I used 2 AC Delco EP12S pumps, mounted as close to the tanks as possible. I teed them to the fuel line directly eliminating the fuel transfer valve. These fuel pumps will act as one way valves. I installed a oil pressure safety switch on the engine, then run a fused 10 ga wire to a relay mounted where the transfer valve used to be. The wire that was on the transfer valve can be hooked to the relay to the NO pin. This allows the tank switch on the dash to work normally. If the AC Delco pump is not available a substitute is E8012S at most parts stores.
The pumps are small enough that they can be mounted inside the frame rails and are out of the way and have totally eliminated vapor lock.

Did you isolate the pumps in any way to minimize the sound inside the coach?

The pumps are mounted in a rubber lined cable clamp. this seems to isolate the sound somewhat. You can still hear them if you listen carefully.
