Am I going to have to make a run to the hardware store for some pipe thread gunk, or can I use the roll of teflon tape I have in my toolbox to seal the threads on the fittings between the propane tank and the regulator?

Aham,
I happen to love teflon tape, but it still isn't always my first choice.
My advice?
Don't use it unless you are willing to be Very Careful and still, don't use it everywhere.
What should you get?
The Teflon thread sealant that comes in a white tube. Loctite 565 is just one, but there are others. It is sort of expensive, but a tube is a lifetime supply, it will not set up (I have one tube in a tool box that is over 30yo), and it is clean to carry.
As to Teflon Tape..
Don't use it on steel fittings as they very often have burrs in the thread that will tear the tape during assembly.
Don't use it places where tiny shards of teflon may screw things up. (Like in the rear suspension controls.)
Any place you do use it, use only 1-1/2 turns starting at least one clear thread back on the male fitting.
There is special tape for LP service. It is colored (coloured - ca), most typically green from my suppliers.
As said, I love it and have always had good success where I did use it. The coach tool box has both tape and a tube in it.

When I have a pipe fitting I can't take a chance on leaking (like a water coil on the bottom floor of a 6 story building that I had to drain down) I use the tape and teflon pipe dope together. I used tape only once only to see it drip.
